Ingredients

For the Fish:
  • 2 fillets of white fish (hake, cod, or seabass)

  • 2 tbsp extra virgin olive oil

  • ¼ cup almond flakes

  • ½ tsp Himalayan salt

  • ¼ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp paprika

  • 1 tbsp fresh lemon juice

For the Green Beans:
  • 2 cups fresh green beans, trimmed

  • 1 tbsp butter or ghee

  • 1 clove garlic, minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 tsp lemon zest

Preparation

  1. Preheat the Oven:

    • Preheat the oven to 200°C (400°F).

  2. Prepare the Fish:

    • Place fish fillets on a baking sheet lined with parchment paper.

    • Drizzle with olive oil and lemon juice, then season with salt, black pepper, garlic powder, and paprika.

    • Sprinkle almond flakes evenly over the fillets.

  3. Roast the Fish:

    • Roast in the preheated oven for 12-15 minutes, or until the fish is flaky and the almonds are golden brown.

  4. Prepare the Green Beans:

    • While the fish is roasting, heat butter or ghee in a pan over medium heat.

    • Add garlic and sauté for 30 seconds until fragrant.

    • Toss in the green beans and season with salt, black pepper, and lemon zest.

    • Sauté for 3-4 minutes until bright green and slightly tender.

  5. Assemble & Serve:

    • Plate the green beans and place the roasted fish on top.

    • Drizzle with extra lemon juice for a fresh, zesty finish.
