Omega-3 Power Salad with Salmon & Avocado

Ingredients

  • 1 fillet wild-caught salmon (grilled or baked)

  • 1 handful of mixed leafy greens

  • ½ avocado, sliced

  • ¼ cup walnuts

  • 1 tbsp pumpkin seeds

  • 1 tbsp extra virgin olive oil

  • 1 tbsp balsamic vinegar

  • Salt & pepper to taste

Preparation

  • Grill or bake salmon at 180°C (350°F) for 12-15 minutes.

  • Toss greens, avocado, walnuts, and pumpkin seeds in olive oil and balsamic vinegar.

  • Top with salmon and serve immediately.
