About the Recipe

Ingredients

  • 1 cup cooked chickpeas (or canned, rinsed)

  • ½ cucumber, diced

  • 10 cherry tomatoes, halved

  • ¼ red onion, finely chopped

  • ¼ cup feta cheese, crumbled

  • 1 handful of fresh parsley, chopped

  • 1 tbsp extra virgin olive oil

  • 1 tbsp fresh lemon juice

  • ½ tsp dried oregano

  • Salt & pepper to taste

Preparation

  • Combine chickpeas, cucumber, cherry tomatoes, red onion, and parsley in a bowl.

  • Add feta cheese and toss gently.

  • Drizzle with olive oil and lemon juice, then sprinkle with oregano, salt, and pepper.

  • Serve immediately or store in the fridge for up to 2 days.
