About the Recipe

Ingredients
1 cup cooked chickpeas (or canned, rinsed)
½ cucumber, diced
10 cherry tomatoes, halved
¼ red onion, finely chopped
¼ cup feta cheese, crumbled
1 handful of fresh parsley, chopped
1 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
½ tsp dried oregano
Salt & pepper to taste
Preparation
Combine chickpeas, cucumber, cherry tomatoes, red onion, and parsley in a bowl.
Add feta cheese and toss gently.
Drizzle with olive oil and lemon juice, then sprinkle with oregano, salt, and pepper.
Serve immediately or store in the fridge for up to 2 days.
