About the Recipe

Ingredients

  • 2 free-range eggs (boiled, poached, or fried in ghee)

  • ½ avocado, sliced

  • 1 handful of baby spinach or Swiss chard

  • ½ cup sautéed mushrooms (cooked in olive oil or ghee)

  • 1 tbsp flaxseeds or hemp seeds

  • 1 tbsp fermented veggies (sauerkraut or kimchi)

  • 1 tsp extra virgin olive oil

  • Pink Himalayan salt & black pepper to taste

Preparation

  • Sauté mushrooms in olive oil or ghee until tender.

  • Assemble all ingredients in a bowl.

  • Drizzle with extra virgin olive oil and season with salt & pepper.

  • Enjoy as a nutrient-dense, blood-sugar-balancing breakfast.
