About the Recipe

Ingredients
2 free-range eggs (boiled, poached, or fried in ghee)
½ avocado, sliced
1 handful of baby spinach or Swiss chard
½ cup sautéed mushrooms (cooked in olive oil or ghee)
1 tbsp flaxseeds or hemp seeds
1 tbsp fermented veggies (sauerkraut or kimchi)
1 tsp extra virgin olive oil
Pink Himalayan salt & black pepper to taste
Preparation
Sauté mushrooms in olive oil or ghee until tender.
Assemble all ingredients in a bowl.
Drizzle with extra virgin olive oil and season with salt & pepper.
