Ingredients

  • 1 slice of sourdough bread, toasted

  • ½ avocado, mashed

  • 1 free-range egg (poached or fried)

  • 1 tsp extra virgin olive oil

  • ½ tsp lemon juice

  • ½ tsp Himalayan salt

  • ¼ tsp black pepper

  • ¼ tsp chili flakes (optional)

  • 1 tsp hemp seeds or flaxseeds (optional for extra protein)

Preparation

  • Toast the sourdough: Place the sourdough slice in a toaster or on a hot pan until golden brown.

  • Mash the avocado: In a small bowl, mash the avocado with lemon juice, salt, and black pepper.

  • Cook the egg:

    • Poached egg: Bring a pot of water to a gentle simmer, add a splash of vinegar, and poach the egg for 3-4 minutes.

    • Fried egg: Heat a pan with olive oil and fry the egg to your preference.

  • Assemble the sandwich: Spread mashed avocado on the toasted sourdough.

  • Top with the egg: Place the poached or fried egg on top of the avocado.

  • Garnish & serve: Drizzle with olive oil, sprinkle with chili flakes (if using), and add hemp or flaxseeds for an extra boost.
