About the Recipe

Ingredients

  • 2 free-range chicken breasts

  • 1 tsp turmeric

  • ½ tsp paprika

  • ½ tsp cumin

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • 1 cup roasted butternut, carrots, and zucchini (cut into cubes)

  • 1 tbsp tahini dressing (tahini + lemon juice + water + garlic)

Preparation

  • Preheat oven to 200°C (400°F).

  • Coat chicken with turmeric, paprika, cumin, olive oil, salt, and pepper.

  • Bake for 25-30 minutes or until cooked through.

  • Meanwhile, roast butternut, carrots, and zucchini in olive oil and salt for 20-25 minutes.

  • Serve with tahini dressing and enjoy!
