About the Recipe

Ingredients
2 free-range chicken breasts
1 tsp turmeric
½ tsp paprika
½ tsp cumin
1 tbsp olive oil
Salt & pepper to taste
1 cup roasted butternut, carrots, and zucchini (cut into cubes)
1 tbsp tahini dressing (tahini + lemon juice + water + garlic)
Preparation
Preheat oven to 200°C (400°F).
Coat chicken with turmeric, paprika, cumin, olive oil, salt, and pepper.
Bake for 25-30 minutes or until cooked through.
Meanwhile, roast butternut, carrots, and zucchini in olive oil and salt for 20-25 minutes.
Serve with tahini dressing and enjoy!
