Ingredients
2 free-range eggs
¼ cup full-fat cottage cheese
1 tbsp ghee or olive oil
½ tsp turmeric
½ tsp black pepper
½ tsp Himalayan salt
1 handful baby spinach
½ avocado, sliced
Preparation
Heat ghee or olive oil in a pan over medium heat.
Beat eggs and mix with cottage cheese, turmeric, salt, and black pepper.
Pour into the pan and scramble gently until cooked through.
Stir in baby spinach and cook for 1 more minute.
Serve with avocado slices for a nutrient-dense breakfast.
