Ingredients

  • 2 free-range eggs

  • ¼ cup full-fat cottage cheese

  • 1 tbsp ghee or olive oil

  • ½ tsp turmeric

  • ½ tsp black pepper

  • ½ tsp Himalayan salt

  • 1 handful baby spinach

  • ½ avocado, sliced

Preparation

  • Heat ghee or olive oil in a pan over medium heat.

  • Beat eggs and mix with cottage cheese, turmeric, salt, and black pepper.

  • Pour into the pan and scramble gently until cooked through.

  • Stir in baby spinach and cook for 1 more minute.

  • Serve with avocado slices for a nutrient-dense breakfast.
